Member Highlight: The Noeskes

Greetings fellow Bluestem CSA members! My name is Katie Noeske, and I have lived in Gaylord, MI with my husband, Joel, and our two boys, Caedmon and Ansel, for the past eleven years (minus a year spent in Poland doing missionary work). Like many moms, I became passionate about wellness during my first pregnancy. One of the best things I can do for my family is to feed them local, organic food. During the summer, we eat a salad or slaw daily.

Here are a couple recipes Katie will be making this week:

Carrot Slaw* 

Toss:

5 carrots, chopped

1/2 c pecans, chopped

1/2 c golden raisins

Dress with:

2 T evoo

1 T lemon juice

pinch of salt

Katie's Honey and Lime Napa Slaw

I don't follow a strict recipe here, sometimes adding green apples and/or carrots.

Thinly slice Napa cabbage.

Toss with dressing of equal parts EVOO and lime juice, sweetened with raw honey. I usually use 1/4 cup EVOO, 1/4 cup lime juice, and 2 teaspoons honey, but of course you can adjust this ratio to please your palate.

Sprinkle with feta cheese and pepper.
