There are plenty of myths around the science of canning. In this class, we'll share a few of our favorite ways to put tomatoes up for winter, and demonstrate modern best practices and safe, tested recipes. We'll also offer some quick tips for freezing and drying tomatoes, and whip up a batch of lacto-fermented salsa for the group to divide up and take home.
Bring a knife and cutting board and a clean pint jar to carry your salsa home. If it's convenient, bring along a potluck contribution so we can nosh while we talk.
