Member Highlight: The Schultz Family
Mike and Alyssa Schultz live in Bellaire with their four children, two dogs and flock of chickens, and have been members of Bluestem Farm since Fall 2015. They are year-round outdoor enthusiasts who love to stay active and eat local whole foods.
Looking to feed a hungry crowd? Fried rice is a Schultz family favorite. Start with some rice.
Brown Rice in the Crockpot
Start it after breakfast, and lunch comes together quickly. Or cook it on the weekend and keep in the fridge for easy dinner prep.
Place 2 cups brown rice, 5 cups water, and 2 teaspoons salt in crockpot. Stir, cover and cook on high for 3 hours without removing lid.
Sauté any finely chopped vegetables along with garlic, starting with the hardier veggies and adding the delicate ones later. Our favorites are carrots, green beans, green onions, peppers, squash, broccoli, cabbage, spinach, kale, and peas. When the veggies are cooked, crack a few eggs into the pan and quickly scramble them. Stir in the cooked rice. Add a few splashes of soy sauce and a splash of sesame oil.
Remove from heat and serve.
