Weeknight Red Lettuce Salad with Pickled Radishes, Scapes, and Lemon-Dill Dressing

Serves one person as a main dish, more as a side. 

1/2 head of red leaf lettuce

1 bunch garlic scapes, tossed on the grill and then cooled

3 radishes, sliced and steeped in red wine vinegar for a couple hours

Dressing

2 tablespoons olive oil

1 tablespoon lemon juice

a little salt

1/2 bunch of fresh dill

To double the antioxidant value of your salad greens, rip the leaves with your hands. This causes the leaves to release more phytonutrients, according to Jo Robinson of the fine book Eating on the Wild Side

Toss and enjoy.
