Herbed Paleo Waffles

This 4-ingredient take on waffles works as well as a high-protein, anytime snack as it does for breakfast. And because you remove the steps of whipping the egg whites and melting all that butter, they’re way quicker to pull together than traditional waffles.

Ingredients

2 eggs

2/3 to 3/4 cup almond flour

1-2 tablespoons crumbled goat cheese

1/4 cup chopped chives + thyme, or substitute chopped blanched greens

Procedure

Make your waffle iron pretty hot. If there’s a dial, set it almost as hot as it will go.

Crack the eggs into a cereal bowl and scramble them with a fork. Stir in the chopped herbs, goat cheese, and almond flour.

You want the batter to be a little thicker than traditional waffle batter, so make sure you drop a spoonful into every quarter of the waffle iron.

Spread the batter out a little, then close the lid and hold it down for the first 30 seconds—that helps the thick batter to squeeze itself out to the edges.

I like to eat these out of hand, like an Eggo waffle.

Makes one super substantial waffle.
